Bonita Springs is a versatile coffee suitable for filter, espresso and milk-based drinks. Its character is reminiscent of a dessert, such as a Black Forest gateau. When freshly brewed, its intense sweetness comes to the fore. As it cools, the delicate currant acidity becomes more pronounced, adding necessary tension to the flavour profile.

First pour: Let coffee bloom with 50ml of water for 35sec
Second pour: Fill up gently wetting the entire coffee bed until 240ml

Total extraction time: 2min 15sec

Origin

The Bonita Springs estate, located in Alto Lino near Boquete in Panama, has been managed by the Miró family for over 80 years. Spanning 36 hectares, the estate boasts lush vegetation, abundant water sources and diverse microclimates – providing ideal conditions for growing high-quality specialty coffee.

Several premium varieties are cultivated on the farm, including the highly prized SL28, renowned for its clarity and intense fruitiness. These are complemented by other specialities, such as Caturra and Typica, as well as rarer cultivars that benefit from the different microclimates.

In the natural process, fully ripe cherries are selected and laid out unpulped on raised drying beds. Regular turning ensures the cherries dry evenly, enabling the beans to develop considerable natural sweetness and fruity aromas. This process is typical of high-quality naturals from Boquete, giving the coffee its characteristic richness and complexity.
